What is E-Polylysine?

E-Polylysine (ε-Polylysine) is a natural antimicrobial peptide used as a food preservative to inhibit the growth of Gram-positive and some Gram-negative bacteria, yeasts, and molds. It is widely applied in food, pharmaceuticals, and cosmetics for its broad-spectrum antimicrobial activity, biodegradability, and safety.

Approved by major regulatory bodies such as the FDA, EFSA, and WHO, E-Polylysine is GRAS (Generally Recognized as Safe) and listed under E-Number E239 in the European food additive system.

Epsilon-Polylysine is a homopolymer of Llysine, one of the essential amino acids. It’s connected by ε-amido bond compounded by a ε-amido of l-lysine and a a-carboxyl of another l-lysine. It is prepared from a fermentation for process using Streptomyces albulus under aerobic condition.

ε-Polylysine is commercially used as a food preservative in Japan, the republic of Korea and in the USA. Food products containing polylysine are mainly found in Japan. The use of polylysine is common in food applications like: boiled rice, cooked vegetables, soups, noodles and sliced fish (sushi).
